It May Be Cinco de Mayo, but..

We just weren’t in the mood for Mexican fare tonight. Yesterday, the Boyfriend and I decided to boycott drinking too much and eating way too many tacos for a yummy bowl full of steamed mussels instead.

It was the first time we made this dish at home and I must admit that I’m a bit embarrassed that we’d never made it before – it’s super easy!! We used a recipe for Steamed Mussels from Bobby Flay off FoodNetwork.com. Only a few ingredients are required to make a dish that’s impressive enough for a surprise romantic evening with your babe or even a first date to score you a new babe. This one is sure to score you extra brownie points, indeed!

Afterwards, I could have gone for a piece of Pecan Pie I baked on Saturday but unfortunately that one got picked at and devoured pretty quickly. Here’s the pie recipe I used from FoodNetwork.com that I topped off with some bourbon whipped cream – okay, a little bourbon mixed with Cool Whip but I promise you, it’s just as good! It brings out a rich depth of flavor and sweetness to the whipped cream that made it a perfect topping for my Pecan Pie. :)
