Mother’s Day Dinner Delights!

Happy Mother’s Day to every mother, grandmother, and great-grandmother today!

To celebrate Mother’s Day in our house today, us kids made my boyfriend’s mom a special dinner with Seafood Risotto, Steamed Clams and my contribution, Banana Cream Pie!

The Boyfriend’s brother showed off his cooking skills with a patient risotto made with white wine, shallots, garlic and chicken broth, stirring and stirring until it was time to add yummy scallops and shrimp. Just finish it with some lemon juice and parsley and then serve immediately.  

We also enjoyed Steamed Clams that the Boyfriend’s sister made. Saute some fresh ginger, chopped jalepenos, shallots and garlic together before adding white wine. Let the mixture boil just a bit and add the clams. Stir it around and cover with a lid to steam for a few minutes. These cook up in a flash – once the clams open up, they’re done!

And finally for dessert, the Boyfriend and I made Banana Cream Pie – one of his mom’s favorite desserts! The recipe is super easy and I used a graham cracker crust instead of the pretzel crust. The photos don’t do it justice plus my pie slice wasn’t very good, but none of that matters – it tasted pretty good!
