Lobster Ravioli with Alfredo Sauce
Most of us don’t have time to actually cook some days and just want to whip up something easy that’s still interesting and tasty to eat.
Tuesday was one of those nights for us so we opened up a package of Lobster Ravioli that we picked up at Trader Joe’s for dinner. If you’re in a pinch and don’t want to eat a frozen or canned meal, this is a fun way to go while still telling yourself that you’re eating “lobster”.
Just cook the ravioli for about 5 or 6 minutes in shimmering water, drain, and bring it back to the stove top and add your favorite alfredo sauce to the mix. For this, we chose Bertolli’s Creamy Alfredo Pasta Sauce and added some herbs and pepper flakes to spice up the dish a little bit so that it doesn’t taste completely pre-made.
Overall, it’s not a bad dish and is a super quick fix when you’re in a pinch. And since I’m going to try and stay true to my calorie counting that I started this week, I figure this dinner nets out to about 380 calories. It’s not bad, but not great either considering I didn’t have any vegetables.

my absolute favorite “KWKFX” meal is Chicken & Spinach Salad:
rotisserie chicken breast (from deli)
bag of pre washed baby spinach
1 small apple
1 pk raisins
1/2 vidallia onion
1 tsp sugar
brown onions in pan with sugar. meanwhile chop up or shred chicken breast from rotisserie chicken. chop apple.
toss spinach, raisins, apple, chicken and onions together. top with your favorite dressing.
*crumbled goat cheese and candied almonds (pre-candied from store) are a nice touch to this dish!!

we splurged and had trader joe’s tri colored tortellini with chicken sausage in red pepper alfredo sauce with garlic baguettes..
